I discovered this delicious recipe during a cooking workshop with one of my favourite Ayurvedic cookbook authors, Kate O'Donnell. The flavour is vibrant, the preparation is quick, and the health benefits are plenty.
Are Carrots in Season in Spring?
You might be wondering—aren’t carrots more of a winter veg?
Actually, yes and no. Carrots can be stored in a dark, cool place (like sand or a root cellar) for several months, making them a wonderful late-winter and early-spring option. Their availability and digestibility make them ideal during transitional seasons like spring.

Ayurvedic Perspective on Carrots
In Ayurveda, carrots are:
Sweet and slightly bitter – the bitter quality is excellent for balancing Kapha, especially in spring.
Easy to digest – light and absorbable, perfect for a cleanse.
Anti-inflammatory – known for their wound-healing properties.
Supportive of the eyes, nerves, and brain – and great for post-illness recovery.
👉 Carrot seeds, while potent aphrodisiacs are not suitable during pregnancy as they may stimulate uterine contractions. (This doesn’t apply to the root used here.)
But that’s not all; here are some healing qualities of carrots. They are:
building strength and stamina.
increasing appetite.
strengthening the eyes, nerves, and brain.
reducing gas.
great for convalescence.
Why This Soup Works

Ginger – stimulates digestion, circulation, and warmth.
Coriander powder – supports absorption and balances Pitta and Kapha.
Together, they add a gentle spice that makes this a perfect cleanse recipe, especially during spring or autumn.
Tip for Busy Days
If you work with me regularly, you know that I am a big fan of planning and preparing your meals ahead of time. If you know what you will cook the week ahead, on Sunday, for example, you can prepare your carrots in this instance, clean and cut them as needed, and then store them in a glass container in the fridge, so cooking on busy days is a piece of cake.
Cooking this soup, you could also batch-grate ginger for the week ahead and add one tablespoon to this recipe.
Now to this recipe. Ginger adds spice and makes it a great cleanse recipe, both during spring and autumn cleanses. Coriander powder helps with digestion and absorption.
Cooking with Carrots
Carrots are super easy to cook. Because of their wonderful taste, they are super tasty, just boiled or steamed.
They can also be oven-roasted, sauteed, or braised.
So, it’s healthy and super tasty. Here’s the recipe:
Spicy Carrot Soup Recipe
Ingredients (serves 2–3):
4–5 carrots, peeled and chopped
1 tbsp fresh grated ginger
½ tsp coriander powder
Salt to taste
2 tsp ghee or sunflower oil
2–3 cups water (depending on desired thickness)
Optional: squeeze of lemon and chopped coriander to garnish
How to Make It:
In a medium pot, warm the ghee or oil.
Add grated ginger and coriander powder. Sauté gently until aromatic.
Add the chopped carrots and stir to coat with the spices.
Add water and bring to a boil. Simmer until the carrots are soft.
Blend the soup until smooth and season with salt.
Optional: add lemon juice and garnish with fresh herbs.
